Hakurei Turnip Salad Recipe
Ingredients 1 bunch of hakurei turnips with greens (5 or 6 turnips) 1 bunch of salanova-mustard lettuce mix 1/4 cup chopped pecans/walnuts and/or sunflower seeds (optional) 2 Tablespoons balsamic vinegar 1 Tablespoon honey 1 Tablespoon dijon mustard 1 Tablespoon olive oil
Directions
Rinse and chop into salad-sized pieces the greens from one bunch of turnips.
Put the greens from the turnips and the salanova lettuce mix in a salad bowl.
Wash as many turnips as you think you’d like to eat. Cut the ends off the top and bottom of the white part of the turnip.
Cut each turnip in half and slice thinly.
Add the white turnips to the salad bowl.
In a separate small bowl, mix together the vinegar, honey, olive oil and mustard.
Then pour over the salad, and toss the salad to coat all the greens. Top with walnuts, pecans and/or sunflower seeds.
*** Get creative and feel free to add additional toppings/put your own spin on the salad recipe! For example you can add sliced hardboiled eggs as a topping for some additional protein!
