Garlic Lemon Swiss Chard Recipe
An Antigonish FM recipe by Elizabeth Talbot, Diabetic Intern.
1 bunch of Swiss Chard
1/2 a Lemon, Zested and Juiced
2 Garlic Cloves, Minced
1Tbsp of Olive Oil
Fresh Ground Pepper to Taste
Wash and dry swiss chard.
Chop stocks into 1 inch pieces.
Roughly chop leaves into 1 1/2 - 2 inch pieces. Keep separate from stocks.
Heat pan over medium heat and add olive oil to pan once heated.
Add garlic and sauté for 30 seconds -1 minute, until fragrant.
Add stocks to pan, bring heat down to medium-low, and cover pan. Cook until crunchy.
Add leaves, lemon zest, and lemon juice to pan and sauté uncovered until wilted.
Remove from heat and add fresh ground pepper.
Serve and enjoy!
