2022 Food Box #12 - Celery


Celery is a refreshing and delightfully crunchy vegetable. Celery has antioxidant, anti-inflammatory, and antibacterial characteristics. Celery is even used in some Chinese medicine as an agent for reducing blood pressure and other protective and combative measures. Celery has a shelf life of only a few days and should be stored in the refrigerator until use. Celery can be used as an extra crunch in soups, stir fries, casseroles and salads. As well, it can be blended into smoothies or juices because of its high water content. Personally, I believe celery is best enjoyed raw. Try adding celery to your appetizer or snack plates paired with dips such as hummus, ranch, peanut butter or just on its own. (Also it is an essential ingredient in a bloody caesar.)
