Everyone enjoys vegetables when they taste like candy! Try making these caramelized carrots as a side dish to accompany your favourite protein such as steak or chicken legs. These simple, sweet and sticky carrots will be sure to impress.
Ingredients (serves 4 as a side dish)
-8 small-medium carrots
-3Tbs butter melted
-2 cloves or 1 tsp of minced (add more or less to your taste)
-salt and pepper (to taste)
-Preheat oven to 375 degrees
-wash and pat dry your carrots (optional to peel the carrots)
-cut the tops off the carrots (saving as much carrot as you can)
-slice the carrots into finger sized slivers (lengthwise, then each length again in half). Place your carrots on a baking sheet.
-mix together your garlic, melted butter, honey and salt and pepper
-toss your carrots in the butter mixture and spread the carrot slivers evenly on the baking sheet.
-cook for approximately 15-20 minutes (to your desired crispy-ness)
