Rhubarb Sour Cream Coffee Cake Recipe
Ingredients
Cake
1/2 cup butter or margarine
1 1/2 cups of brown sugar
1 egg
2 cups of flour
1/2 teaspoon of salt
1 teaspoon baking soda
1 cup of sour cream
1 teaspoon of vanilla
1 1/2 cups of chopped rhubarb
Topping
1/2 cup of brown sugar
1/2 cup of chopped walnuts
1 teaspoon of ground cinnamon
1 tablespoon of melted butter
Directions
Cake:
Preheat oven to 350 degrees Fahrenheit.
Mix flour, salt, and baking soda together in a small bowl, then set it aside.
Meanwhile cream the butter and sugar together in a large mixing bowl.
Beat in the egg with the butter and sugar.
Then mix in the sour cream and flour mixture (from the small bowl) alternately.
Mix in the vanilla.
Stir in the rhubarb.
Pour into a greased 9" x 13" pan.
Topping:
Mix all topping ingredients together in a bowl, until crumbly.
Sprinkle topping over cake mixture before placing in the oven.
Then bake the cake for 40-60 minutes until done.
